Winter Solstice Wheel of the Year Cake ~ Design & Recipe

I made this cake for the first time a few years ago. You don't have to be a brilliant baker... this one is made from a yellow cake mix, though of course if you are a brilliant baker you can make yours from scratch. Pour batter into two round 8" pans, bake according to directions and cool. Place one of the layers in the middle of a large platter (we used a pizza plate) Cut the other layer into 8 equal wedges and trim the edges so they fit flush against the center layer. If the second layer has puffed up too much in the middle you might want to slice the puffy parts off first. The frosting is simple butter frosting made with 1 box of confectioners sugar, 3/4 stick of softened butter, 1/2 tsp vanilla (you could also use lemon flavoring) and a few drops of yellow food coloring. We also added a lot of little birthday-sized candles but hadn't bought them yet when this photo was taken. A Happy Solstice and Joyous Yule to all:-)

From a page I created a few years ago called Yuletide Recipes that also includes recipes for Wassail and some other yummy desserts that I've collected over the years.

ScribbyCat ~ Yes it can be used for all 8 holidays and for secular celebrations like birthdays too 'cause it's just a big star, right? LOL!

Tammy ~ I wish I could take credit for those stained glass windows but I just came up with the designs... a talented friend actually made them. She said the sun windows was much harder to make than one with the moon and stars because the long slim pieces were so delicate and hard to handle... not knowing anything about stained-glass-window-making that hadn't occurred to me when I drew up the design. She was a sweetie not to charge us more than she did. My husband installed them in the house we were living in at the time and 11 years ago when we sold the house I made the RE agent put in the contract that those windows were NOT included I loved them so much! The buyers were not pleased LOL!
